Ruby Red Grapefruit with Rosemary Syrup

Our guests like this unique twist to traditional grapefruit. Fresh Rosemary creates a delicious flavor profile.



1 c sugar
1/2 c water
3 tbls honey
3  4″ sprigs of fresh Rosemary, plus extra for garnish
10 Maraschino cherries
5 ruby red grapefruit

Serves 10


Step 1: Combine sugar, water, honey and Rosemary in a saucepan and boil for 5 minutes to create a syrup.
Step 2: Let cool and remove Rosemary sprigs.
Step 3: Peel and section grapefruit.
Step 4: Combine syrup and grapefruit sections in a bowl and chill.
Step 5: Spoon grapefruit sections and syrup into individual ramekins or small fruit dishes.
Step 6: Garnish with sprigs of fresh Rosemary and Maraschino cherries and serve.
